Ingredients
2 cloves garlic
1 tbsp olive oil
2 fennel bulbs, julienned
1 large onion, julienned
1 T lemon Juice
3 medium tomatoes, chopped
8 oz fat free crumbled feta cheese

The protein in this dish comes from cheese. If you add meat, you could cut back on the cheese (or choose a cheese with a lower sodium content).
Directions
Saute garlic in oil for 1 minute. Add fennel bulbs and onion, and saute until tender, approx. 10 minutes.Add lemon juice and tomatoes and cook over medium heat until liquid partially evaporates, approx. 10 minutes.
Stir in cheese.
